The nomination assesses establishments offering a range of coffee, caffeinated beverages, and coffee beans of various roasts. On-site there can also be presented coffee-making accessories and specialized literature.

  • the establishment serves freshly roasted coffee of different roasting and processing degrees;
  • the barista is a professional, who can enlarge on a variety of coffee sorts, their taste qualities, growing locations, methods of processing each particular variety, descriptors of multiple coffee sorts, as well as on the very process of making a coffee drink;
  • the menu includes classic and alternative methods of making several types of coffee;
  • the establishment uses professional coffee brewing equipment in order to process a coffee drink using various methods;
  • the menu contains a signature coffee-based drinks and introduces seasonal changes, as well as periodic changes in the selection of freshly roasted coffee.

The nomination assesses restaurants specializing in meat dishes.

  • conformity of the restaurant’s concept to the number of different types of meat from different countries (either of mono-format, from one country, including Ukraine);
  • accordance of meat dishes on the menu with the quality of the main product;
  • an assortment of dishes prepared by using different meat cooking technologies ;
  • knowledge of the menu by restaurant staff and expertise in recommending pairings of dishes and drinks.

The nomination assesses restaurants specializing in preparation of Ukrainian cuisine dishes.

  • observance or rethinking of national gastronomic traditions in the preparation and serving of dishes of Ukrainian cuisine;
  • the use of local and seasonal products;
  • chef’s own interpretation of classic Ukrainian cooking technologies;
  • presence of Ukrainian specialties in the establishment’s menu;
  • a range of traditional Ukrainian alcoholic beverages.

The nomination assesses all restaurants opened from April 25, 2019 until March 9, 2020.  Restaurants of different specialization may participate in this nomination.

  • full menu;
  • originality of the restaurant’s concept and its realization.

The nomination assesses establishments, whose staple is a wide range of home-made confectionery (cakes, pies, sweets, cookies, etc.). Mono-product establishments cannot participate in the nomination.

  • conformity of the confectionary to the establishment’s concept;
  • availability of signature recipes and products;
  • quality of food used for cooking;
  • appearance of pastries;
  • an original presentation of products on display.

The nomination assesses catering establishments with a small (compared to a restaurant) choice of dishes that sell alcoholic and non-alcoholic beverages, bakery and confectionery products.

  • reasonable cost of dishes (when evaluating, the average salary in the region is considered);
  • a proportional-to-the-establishment’s-area number of seats;
  • seasonal offers;
  • friendly service.

The nomination assesses establishments where drinks make up at least 70% of the overall menu. Cocktail bars and mono-formats specializing in specific beverages can participate in the nomination.

  • presence of a bar counter;
  • an original cocktail list;
  • alcoholic drinks presented in assortment;
  • exclusive types of alcoholic beverages;
  • a combination of the bar concept and bar list, interior, service.

The nomination assesses establishments remote from the city-centre or beyond the administrative boundary of the city.

  • a picturesque recreational area;
  • covered and outdoor terraces for al fresco dining;
  • developed infrastructure for leisure activities for children and adults;
  • a seasonal menu.

The nomination assesses restaurants that have their own brewery or a large assortment of beer.

  • staff’s professionalism and established communication culture;
  • a large assortment of dishes in various categories of the menu that complement each beer item;
  • drought and bottled beer, the presence of seasonal and original varieties;
  • proper serving and storage of beer.

The nomination assesses establishments specializing in the cuisine of one individual country. This nomination does not include restaurants specializing in Ukrainian cuisine.

  • the menu contains classic and the most popular items of the country’s cuisine;
  • the menu includes cuisine specialties;
  • the use of local products of the country of origin is assessed depending on the region of the cuisine.

The nomination assesses restaurants located in hotels with at least 25 rooms. The ability to meet the needs of all guests is one of the key components of quality service.

  • staff’s professionalism and established communication culture;
  • staff’s proficiency in foreign languages;
  • conformity of the restaurant’s concept to the general concept of the hotel;
  • the menu contains signature items of the chef’s menu, basic dishes for children, vegetarians, and vegans.

The nomination assesses establishments with a large selection of wines and a professional service management program.

Nomination selection criteria:

  • professionalism of the chef sommelier;
  • personnel’s knowledge of the items presented in the wine list;
  • accordance of the wine list with the establishment’s concept;
  • presence of the unique selection of local or foreign wines;
  • a selection of wines of different price segments;
  • proper storage of wine;
  • special events (festivals, dinners, tastings);
  • harmonious combination of cuisine with the establishment’s drink collection.

The nomination assesses establishments where wines make up at least 70% of the overall menu structure.

  • the wine list includes wines of different price segments;
  • availability of a large selection of wines sold by the glass/frequently changed offers of these items which one can purchase at affordable price;
  • the menu includes sets of snacks that complement wine;
  • the establishment has relaxed comfortable atmosphere;
  • the bar organizes thematic, entertainment and educational events and tastings.

The nomination assesses establishments with a diverse assortment of drought and bottled beer.

  • creating a relaxed friendly (homely) atmosphere that encourages communication;
  • instilling a culture of beer consumption;
  • harmonious pairing of food and beer;
  • the staff following the rules of the communication culture;
  • the staff’s professional knowledge of beer sorts and styles;
  • an understandable, not overloaded menu offering dishes, that complement and uncover the taste of beer;
  • proper storage of beer (cold room, refrigerator);
  • serving in glasses at a temperature appropriate for each particular beer sort;
  • availability of exclusive aged rare beers;
  • price-quality ratio.

The nomination assesses establishments specializing in the cuisine of the countries of Southeast and South Asia.

  • the menu contains classic and the most popular dishes of the country’s cuisine;
  • the menu includes cuisine specialties;
  • the use of local products of the country of origin is assessed depending on the region of the cuisine.

The nomination assesses only those bakeries that specialize in production of puff pastry and bakery products.

  • quality and richness of choice;
  • use of natural and high-quality products;
  • freshness of bakery products;
  • availability of a display case for bakery products.
